SUPER CREAMY AMATRICIANA RISOTTO

Ingredients (4 servings):
320 g Carnaroli rice
150 g guanciale
400 g tomato passata
800 g hot water
80 g Pecorino Romano cheese
30 g extra virgin olive oil
chilli pepper to taste
black pepper to taste
parsley to taste
salt to taste
(½ onion, optional)
Thermomix Method:
1️⃣ (Optional) Onion → 5 sec speed 5
2️⃣ Crispy guanciale
8 min | 120°C | speed 2 | reverse (without measuring cup)
3️⃣ Add passata + chilli pepper
6 min | 100°C | speed 2 | reverse
4️⃣ Add rice + water + salt
16-18 min | 100°C | speed 2 | reverse
(if needed +2/3 min or a splash of water)
5️⃣ Creaming
Pecorino + pepper + parsley
1 min | speed 2 | reverse
⏸️ Rest for 1 min
Final: Crispy guanciale on top + Pecorino + parsley
