Red Prawn Bisque with Thermomix


like at a restaurant… but super easy

With the Thermomix (any model) it comes out creamy, intense and super gourmet

Recipe (4 servings):

- 80–100 g pre-made or fresh soffritto
- 100–120 g Datterini tomatoes
- Heads and shells of 500 g shrimp
- 40 g extra virgin olive oil + 30 g butter
- 50 g white wine

- 400 g water
- Salt, pepper, chili pepper, pinch of sugar
- Butter (for creaming)

Instructions:

- Soffritto + oil + butter
➡️ 5 min / 120° / speed 1

- Add Datterini tomatoes
➡️ 5 min / 120° / speed 1

- Add shells (crush them!)
➡️ 8 min / 120° / speed 1

- Deglaze with wine
➡️ 3 min / Varoma / speed 1

- Add salt, pepper, chili pepper, sugar
➡️ 3 min / Varoma / speed 1

- Add water
➡️ 60 min / 100° / speed 1

- Blend + strain
Blend (using blend mode for 30 sec) speed 8
Strain by hand as in the video, with a sieve
➡️ 10 min

- Cook pasta al dente and cream with the bisque + cooking water + butter
➡️ 5–8 min

Secret: the more it reduces → the more it tastes like a restaurant
